The Colatura di Gambero Rosso® is a product made with a patented method, born from the idea of replicating an ancient fishermen's recipe which consists in recovering the heads of prawns which broke during trawling.
Using the heads of the recovered prawns, the captain made a tasty dish for himself, seasoned with the juices and eggs present in the carapace. Hence the idea of developing the same product and making it available to all those who love red prawns.
The Colatura di Gambero Rosso® does not have the flavor of red prawn or bisque but contains the flavor of the carapace (head). An umami flavour, a taste that goes beyond what we are used to describing as salty, sweet, bitter and acidic.
