PISONI - since 1852

In Pergolese, in the heart of the Valle dei Laghi (Trento), there is a family farmstead which tells a centuries-old story, almost a “crossroads” linking the territory and the Pisoni family, which has worked and lived there since 1852.

Being born in the Valle dei Laghi, a magical land, “Valley of Light” with unique features giving great quality grapes is not a merit, it is a fortune... and, no doubt, an enormous added value.

Distillation for the Pisoni family is an art. There are no schools to teach distilling; progress in this field comes from the combination of experience and experimentation.

The Classical Method (Metodo Classico) is inspired by the “Méthode Champenoise”, discovered in the late 1700s in the abbey of Hautvillers in the Champagne region of northern France. The Valle dei Laghi is one of the areas of Italy most suitable for the production of Trento DOC. The Pisoni, in the early 1970s, were among the first in Trentino to realise the potential of this land for producing this prestigious sparkling wine.

Remuage by hand - Pisoni bottles are arranged on special wooden turning frames or “pupitre”, to be turned and shaken with care for 22- 24 days, so that the yeast collects in the neck. To facilitate this gradual rotation, each bottle is marked on the bottom with a stroke of white paint, which is also visible on the finished product.

The production of Pisoni Trento DOC is cherished like a precious family treasure. The Pisoni, among the first producers in Trentino and one of the founders of the Istituto Trento DOC, have a long history in the art of Spumante Metodo Classico.
